A Survey of Research Works, Dictionaries, and Encylopedias on Hanoi Cuisine toward the Compilation of an Encylopedia of Hanoi Cuisine

Abstract

Cuisine is a subject of interest across many academic disciplines, including cultural studies, history, nutrition science, anthropology, sociology, linguistics, and lexicography. Research on the cuisine of a particular locality not only provides insights into the food and drinks but also reflects the culture of that region. Therefore, studying Hanoi cuisine to identify the unique features of Vietnamese cuisine in general - and Hanoi cuisine in particular - contributes to understanding the cultural identity of Vietnam. In this article, we review existing research, reference works such as dictionaries and Encyclopedias on Hanoi cuisine to provide readers with an overview of the current state of research and compilation in this field. On this basis, it proposes directions for compiling reference works on Hanoi cuisine, with the aim of introducing and disseminating Hanoi and Vietnamese culinary culture to a wider audience, both domestically and internationally, thereby contributing to tourism development and the preservation of Vietnamese cultural heritage.
